Coffee Coconut Clusters

Okay! So here's an easy peasy, lovely little recipe for some delightful short eats that is a must try for all coffee lovers! If you love chocolate and coconut, well, its just a bonus! There's no reason why you shouldn't be making these even if there's no festive season round the corner. Just make them for your self and enjoy them, all by yourself if you like! 

I made these during Christmas last year and never got around to posting the recipe. I've been waiting for an opportunity to post this recipe but none came my way - or maybe I just didn't give it enough priority. Now that we are in the midst of nothing specific, no festive season around the corner, its a great time to try out some sweets and keep them handy, just in case. 

If you see the pictures, these clusters are just that - clusters, not perfectly shaped balls, so you can get them ready without a lot of effort. The only thing you need to do before you pop them in your mouth is chill them for a few minutes - worth the wait, I tell you! 

Coffee Coconut Clusters
Prep time: 10 mins | Chilling time: 20 mins | Yield 

1. Line 2 baking sheets with baking parchments.
2. Place the chocolate and butter in a heatproof bowl and place the bowl over a saucepan of gently simmering water.
3. Stir the chocolate until it melts into a smooth mixture. Remove the bowl from the heat
4. Stir in the coffee granules and mix. Next add the desiccated coconut and mix well.
5. Place teaspoonfuls of this mixture spaced apart on the prepared baking sheets. Cover and chill in the fridge for about 20 minutes or until set.
6. Place the clusters in mini cupcake liners or sweet cases and garnish with desiccated coconut before serving.

The heat proof bowl should be fairly big (enough to accomodate the coconut when added to it) and it should completely cover the mouth of the saucepan so that no water is able to get into the bowl. Even if a single drop or water gets into the chocolate it will turn into a hard mess
